On our Amtrak route, there is only one person in the cab - the engineer.

I actually wouldn't expects a conductor to be in the cab of the locomotive on an Amtrak train, generally speaking, but on the other hand, I certainly wouldn't expect the engineer to run over to the other side of the cab as he's pulling his train into a station!
